For many years the baking industry was driven by the uprising progress of technology and computer science (revolution). In spite of the many results of this progress the negative impacts are very obvious and too numerous. Which lead to the development of the equipment used in the baking industry.

Ayash engineering believes in the utilization of the positive achievement of the technical and computer technology with simplicity in mind and without jeopardizing precision and reliability. The baking industry established certain standards for many years which in our opinion should be revisited and revised. One of these standards is the need for different machines for handling different doughs during the make-up process. And to be more specific, for example, dough dividers. As we know, for hard roll doughs (low absorption dough) and for bun / bread dough.

The volumetric divider (ram and shear) started and continued to be the only choice until extrusion technology was introduced. And in spite of the success of extrusion technology in buns and bread, the hard roll dough industry still uses the old design machinery which limits the production rate, sanitation and maintenance, and in general, the growth of the business.

Ayash engineering, through extensive research and development projects, with the help of highly experienced and qualified professionals in the baking industry was able to simplify and utilize the extrusion technology and adapt it to the hard roll doughs / tortilla, and in general, low absorption dough products.

Ayash engineering researched and developed a dough make-up system for the tortilla industry which eliminates the highly complicated and low production rate volumetric dividers and drum rounder. This was achieved by adapting the positive successful features from the bun/bread extrusion dividers and make-up equipment.

Any dividing process consists of 5 stages:

Pumping, degassing, metering, distributing and scaling

Ayash equipment is doing these 5 stages using only 2 moving parts:

The auger pumps, degasses and meters

The auger/hopper/tunnel by the unique design of this equipment, the one piece manifold equally divides and distributes the dough stream into multiple ports.

The rotary cut-off mechanism scales and cuts the dough stream, depositing the divided dough pieces onto the rounding belt.
